Vegan banana split recipe
I don't like ice cream. There, I said it. It's a real thing guys. So banana splits aren't really on my radar as enjoyable dishes. But I love the idea of them, so I've created my own version that makes for a hella yummy breakfast and is totally vegan. It's warm and filling and I love having it in the morning at this time of year.

Ingredients:

1 banana
3 tablespoons dairy free yogurt (I use Alpro's Vanilla soya yogurt)
75g frozen mixed berries
A small handful of granola

Method:

1.) Place the berries in a pan with a splash of water. Heat for ten minutes, allowing the berries to fully thaw and become more of a compote than separate berries.

2.) Whilst these are cooking, cut the banana in half lengthways and place on a plate.

3.) Use a spoon to scoop out the berries and drizzle over your banana.

4.) Drizzle the yogurt over the top and then sprinkle with granola.


This recipe is so simple, but looks so pretty for guests or, y'know, on the ol' insta feed.
